Well, winter is upon us again and depending on where you live, it can be a little depressing. At Trendy Wellness Zone, we try to find things to do that help to keep up our spirits. Winter is soup season and there are so many different soup recopies out there. We found one that looked interesting and wanted to bring it to you. It’s called the Navy Bean Soup Recipe. The creator/presenter is Will Yeung from Yeung Man Cooking.
It’s a fairly simple soup to make.
Ingredients:
- Several cloves of garlic chopped
- 1 Onion chopped
- 2 Tbs olive oil
- 3 king oyster mushrooms fork shredded with the caps chopped. I think you can use fresh mushrooms that are maybe easier to acquire.
- Thyme (A few sprigs)
- Chile Flakes(Optional)
- Dried Oregano
- 2 cans Navy Beans
- 1 can Chickpeas
- 2 liters vegetable stock
- Lemon zest/juice
- 2 tsp salt
- Fresh cracked pepper
- A spear of avocado
- Chopped fresh spinach
Start with a stock pot on medium heat. Add 2 Tbs olive oil.
Add the chopped garlic and onion. Cook until tender about 3 or 4 minutes.
Add the thyme, Chile flakes, Oregano, Navy beans, Chickpeas, 3 king oyster mushrooms and 2 tsp of salt. Stir together.
Add the vegetable stock and bring to a boil.
Ladle 2 to 3 cups of the soup into a blender. Blend to a creamy texture and return to the stock pot and stir into the soup.
Chop fresh spinach and drop into a serving bowl. Ladle the soup into the bowl on top of the fresh chopped spinach. The hot soup will wilt down the spinach. Garnish with lemon zest and juice. Place a spear of avocado in the center of the bowl and add fresh cracked pepper.
We like this soup recipe because it’s fairly easy to make with very healthy ingredients. There are also some substitutions that can be made if you choose.
We think some fresh baked bread would go well with this soup.
