Well, it’s still winter which is soup season however, we think we found a soup that can be enjoyed year round. The recipe is from Rainbow Plant Life and we thank them. The Soup is a Healthy Lemony Chickpea Soup and we think it looks really good and healthy. The list of ingredients is a bit long but bear with us. We think it’s worth it.
Ingredients:
2 cans of chickpeas. 1 can will be simmered in the soup and the other will be used as the base for a puree.
Long-grain white rice(No more than 1/3 of a cup)
Lemon Juice and Lemon zest
Fresh Dill
White Miso(You can substitute with soy sauce)
Nutritional Yeast
Carrots Finely chopped
Onion chopped
5 cloves garlic
Olive Oil
4 cups vegetable broth
2 Tbs Tomato paste
2 Tsp Oregano
1/2 Tsp Coriander
1/2 Tsp Turmeric
1/2 Tsp Red Pepper Flakes
Handful of baby spinach about 3 oz.
Salt
Cracked pepper
In a large sauce pan or Dutch Oven over medium high heat, add olive oil, carrots, onion and some salt. Cook down for about 10 minutes then add the garlic. Stir so that the garlic doesn’t burn. Add tomato paste, oregano, coriander, turmeric and red pepper flakes. If it gets a little dry, just deglaze with some water or vegetable broth.
Add the rice and stir in well. Add 1 can of the chickpeas followed with salt and pepper.
Pour in 4 cups of vegetable broth followed by adding half of the chopped dill. Bring to a boil and cover. Simmer for 15 minutes until the rice is tender.
Time to make the puree. In a blender, add the 2nd can of chickpeas, creamy plant milk, lemon zest, lemon juice, salt & pepper, nutritional yeast and white miso. Add the puree to the soup.
Chop the spinach and add to the soup. You want it to be just wilted. Finally, add some more lemon juice. Don’t forget the bread. 🥖
We like this soup recipe because of its lemony flavor. It can be enjoyed year round.
